What's the difference between loss and choke? I don't get loss unless the server is dying but my choke seems to fluctuate between 0 and 10 using the standard chris settings.

No, then you would go too far.
When I jump off the wall I try to stay as low as possible to the platform on spire so I can get the most speed out of the jump.
You are possibly going too low which doesn't give you time to get the skip shot in early enough.
basically, skipping is when you shoot before you hit the ground, speedshot is when you shoot as you land.
A speedshot will give you upward momentum so you travel further than skipping.
