I saw on etf2l a method of fixing your custom hitsound on steampipe but it hasn't worked for me.
So far I have hitsound.wav saved in \custom\userstuff\sound\ui and in my autoexec I have: tf_dingaling_wav_override "\ui\hitsound.wav"
Can someone explain to me where I'm at fault?

I did the update a few days ago (like an idiot) so I'm glad I can play on more than 4 servers.
In terms of steam crashing, just let it convert the files, don't touch steam once conversion has started, it will just crash.
