you're using ubuntu, playing video games on steam, using proprietary graphics drivers, using proprietary BIOS
whoever told you that you're not being "spied on" by simply using a linux distro is totally wrong
i'm not sure how well noise cancelling earbuds would work to cancel loud music playing, because the sound waves that come from music are too varying and unpredictable for an algorithm to generate the inverse waves needed to cancel out the sound. noise cancelling would work great on something like the engine noise on an airplane trip, probably not the gym
what you're probably looking for is an in-ear monitor, which forms a seal in your ear canal (i'm just assuming you're not using one since you're having issues with gym music, which i wouldn't expect to be too deafening). in my experience, using a foam tip has the best sound isolation afaik. i'm not enough of a gearhead to point you to a specific earphone but that should send you in the right direction
