No. You can manipulate the camera with POV demos, but you won't be able to see the character model of the player that owns the POV.

Although there may be other, more efficient ways, I know you can type "sv_cheats 1" and "thirdperson" into console on pov demos to get a third person shot, and through the use of some "cam_" commands, you can manipulate it further.

Yes. The POV doesn't cover the entire map though. Only stuff around you. For instance if you are back on gran last if you drive/smooth over to mid or something I doubt you will see anything going on there. I could be wrong though.

You are correct. Only the map will load, stuff like sentries or stickies won't even show up.
