How do I change the description that you see for a stream when you click on the streams tab? I know how to change the stream title, and how to change the info on my twitch page, but I can't seem to figure out how to change that.

I think Mr.Slin is in charge of streams now actually. Just make a post in the request section if something is inaccurate.
