If you do this, you should probably use the tool in the demoui to start both recordings at the exact same tick, otherwise the clips might not sync up perfectly.
It's actually easier to just record with a custom HUD that has only the health visible. No need to sync clips or anything. Only downside is you can't fade in/out the health.

Not necessary. There are umpteen in-game cues that one can use to sync up clips. I like to use kill notices to sync up two clips that are of the same scene, but a different duration.
Of course just having the clips be in sync to begin with (as zigzter suggested) is the easiest, but it's not always the most efficient, such as if you have a 60 second clip, but only need to sync a 3 second clip to it. There's no reason to record a full 60 seconds of footage for the smaller clip if you can use other cues to sync.
I could never get them to sync up perfectly if I didn't use the record-from-tick option.
Even if it was at the exact same time, a player model on my screen might be a tiny bit to the left compared to the original, and I wouldn't be able to get the exact same frames.
