there isn't really a lot of information on when he was born. Christmas in the US is founded on the premise that jesus was born on December 25.

You're wrong, the entire premise of Jesus's birth being on December 25th was decided long before and celebrated for much longer than the existence of the USA (so it would be a whole lot more than just the USA going with Christmas as the de facto day of Jesus's birth). As to why the Dec. 25th was picked was mostly because it was convenient pre-existing holiday and no known actual date for Jesus's birth was known at the time. We now know today that Jesus was most likely born sometime between June and October.
