Can I put the MGE mod on my server with the map and unload the plugin when I want to play hl. If so, how would I go about doing that?

MGE does this automatically, just throw it on and it will only work on mge_ maps

Theres a 'classes' field for each arena of each map in your mgemod_spawns.cfg
