Basically all of the maps from the jump.tf beginnings competitions are pretty good. jump_cube_b6 is a good map, as is jump_4starters. If you want something that's more beginner level, try jump_squared.

The graininess probably has something to do with how the clips were encoded, try recording individual clips to a lossless format, and then encode the final product to something more compressed, for easier uploading. Handbrake is a really handy and straightforward video transcoder.

It should be simple enough to try. Edit some particle effect (like the medigun beam), load up a local server set to sv_pure 0, then connect to a sv_pure 2 server. That said, this is something that maybe we could do without, since preloaded particles could mean that things like Noid's particles that give a tremendous advantage to people that use them would be usable again.
There's already a way to limit particle effects in order to gain an FPS boost here that you may want to look into, if that's what you want to do.

If I had to guess, I'd say that the adapter probably isn't specced to handle your res at 144hz.
I'd just recommend that you get an HDMI cable and use that, or try dropping your resolution or refresh rate.
