You surely realize this goes deep in the territory of 'personal opinions", and not everyone feels the same way about either one of those points.
For me - yeah, playing against engi is part of the game, and brings its own challenge. I *love* taking down sentries, for example.
Second - yeah, watching Muuki's engi plays is highly entertaining - his gunslinger play where he took out the combo was awesome!
But, like I said, we all have different opinions about it.
Now, for the other question if it's better or worse to have roamer vs. flex?
It's neither. It's just different, and it brings its own spice to the game.
I would still bite my fingernails off watching the games, flex or roamer, but I do get more laughs out of the surprising flex plays, and I imagine those plays also give extra fuel to Lowpander players when they're successful :)
Every player in the team has a different role, and if you put a different player to a spot, it would change the dynamics of the team. There are always players who stand out more than others - for different reasons - it can be skill, damage done, or just the role they have. The other players in the team know the value of their team mates - that should be the only thing that matters. Nobody is taking credit away from anyone in this team, they're all great players individually, and put together they melt into an awesome, FUN team!

If y'all have watched and listened to these guys' comms, you know they're not only having a ball, it's sometimes exhilaratingly fun for them - which in itself is way more important than, say, winning the video game. Why play in the first place if it's not for fun?

Yeah, uubers is solid, and I think it's an important part for LP being able to play flex. He can clean up nicely :)
spammyhHonestly speaking, flex does work pretty well on some maps from my experience scrimming lowpander.
I remember Muuki going phlog pyro, building it's charge with a detonator and then going in completely destroying everything that moves. Whatever works for them, really.
There's a clip from a scrim where he pretty much demolishes all the players of the other team as phlog pyro.
My faves are, however, the double spy last caps.

Seriously speaking, yes, the opponent not knowing how to counter the ever changing flex affects their ability to play efficiently. If they start concentrating on countering the flex, they're giving up their own game, and the results are obvious.
Lowpander may me giving up some of their firepower with flex, but their ingenious changes with flex gives them an edge.
Personally, I love watching the flex and the surprises it brings to the game.
