If you're going to die, you can always stickyjump out. If you anticipate a sticky situation, make sure you save a sticky to eject. Just make sure you don't overdo it - if it's an even / winning fight you want to be in good post-uber position to put out damage.
You can also just sit on the flank with a trap - lots of teams send flankers behind when Ubers are happening, because flankers are afraid of Ubers, or they are taking advantage of how shiny and distracting an Uber is to go make a play.
