how big the impact will be depends on things like your refresh rate(!) and in-game fps, but generally speaking you will see a big improvement from 125, up to 500 or 1000.
the difference between 500 and 1000 is less significant (obviously), but can still be a perceivable difference (smoother, quicker).
but the main reason this driver is used for is to bump up the "perfect tracking speed" of the old MLT04 mice (WMO, IMO, IME).
on default 125hz polling rate, if you do a flick and go beyond 1m/s (physical movement), the sensor craps out and your aim goes to shit. "overclocking" to 500+ will bring this cap up to 1,5m/s. (which is still not high, but it absolutely makes a difference.)
