For me, the easy classes were intro humanities (psychology, anthropology, and sociology).
There's nothing wrong with taking some easy classes to help your GPA out if it needs boosting, but don't take too many or you'll graduate college with no skills at all, thus searching for a job with a fantastic GPA but no solid skills like I did :D

joined a pub, played soldier, was really bad so after a few more times of trying I quit for like 6 months :[ got into L4D instead and played that a lot before trying TF2 again and starting to like it after that.
