The problem with your scrim schedule is that it's rare for teams to scrim from 7-9 est. As most teams usually start after 9.
Also, if you want people to help you learn, why not get a mentor for your team? Watching demos and getting critique from one person is easier to find from 7-9 than finding 6 players willing to scrim with you guys during that time.

You're going to have a very difficult time finding scrims that early on weekdays, and very few open teams scrim on weekends. If your team can play on weekdays after 9 est, you can just hop on #tf2scrim and find open teams to play there.
