SLI/Crossfire performance is mostly determined by the game you're playing, so I don't think that point should even be made.
Also it's a bad idea to get something like an i7 and a 7870 unless your main focus is rendering. I'd say an i5 4570k with a gtx 770 or a 7970ghz would be good. Never start a build with the idea that two cards will be better than one. It usually won't.

Also, check if your PSU has more than 42 amps on the 12v rail. It should say something about that on the side of your PSU. If you don't have 42 amps, your GPU may have some problems.

hey blink- if I was in your shoes I would future proof more with the i7-4770k. Games are increasingly going to take advantage of more threads, IMO the 4 extra threads are worth the premium right now, as long as you are not extremely budget constrained.
Your new build absolutely should include an SSD that has enough space to host your OS + at least a few apps and your core steam games. It's kind of silly for any modern build to not include a SSD, it makes a HUGGGEEE difference. It's easily the biggest upgrade you can do for day to day performance.
If your 120hz monitor is 'lightboost' capable you really should go the nvidia route as well with a new card. AMD graphics cards cannot do lightboost. http://www.blurbusters.com/zero-motion-blur/lightboost/

That HDD was in my previous list, so I just kept it there. Besides, you don't really need 7200 rpm if you're just storing data in that hard drive since all the games will be going in the SSD.
