For the white table top:

idk what makes the birch one more expensive. Is it better than the white one? Which one should I get?

I'm assuming the first one is more expensive because it uses wood (more expensive than plastic) and is better quality because of the foil and the layer of acrylic. You'll be fine with the cheap one.
I'd probably go with the slightly more expensive one though. The difference in price isn't that big and it'll probably last longer

I have the bekant gray/black and I love it, in store I really didn't like the white so I decided to pay the extra money. The birch in store kinda looked weird with the white/black options of the legs but more noticeably the white/black trimming around the table top itself. Unless you are set on birch being your favorite I would recommend the gray/black unless it's not in stock. I can take a few pictures of my desk if you would like to see it in a setup-like setting

what's the diff between ash veneer and birch veneer?
the trimming looking a lot better with the table top and black leg was the main reason I bought it over the birch
