a good tenderloin or even duck is the best thanksgiving meat
1. Learn to cook Turkey so it isn't dry.
Deer meat is overall pretty fucking bad, it's so easy to fuck up getting good tasting venison :/
Get an old deer and you get really tough stringy meat.
Deer was able to run off after being shot and later bleed out? you're in for the worst tasting meat of your life.
Didn't clean the deer immediately? same as above...
Deer wasn't able to feed off of nearby farmland? Extra tough.
Get a deer at the end of season? Extra tough.
Not to mention venison need significantly less time marinating than pork/beef so people usually over do it causing the flavor to be way off.
Other than jerky deer meat usually doesn't turn out that well unless basically everything went right. Deer died immediately, relatively young, feed on farm crops all season long, early hunting season while food is still easily accessible for deer and they haven't been fighting for mates, was properly gutted/bled immediately preferably on a relatively cold day without the use of power tools. Top it off with a butcher that understands that what fat is on the deer needs to be trimmed and the cook needs to prepare the food for a shorter period of time and you have one hell of a chain for something to go wrong.
2. Not sure if you're referring to Pork or Beef tenderloin either way Bison tenderloin is better. Duck though is a A+ Quail is also an excellent choice.
the only way i eat deer now is ground up and put in chili and i still prefer it to turkey
getting a small turkey helps because its easier to cook it right but i'll still really only touch the dark meat
i was talking about pork tenderloin, bison is tasty but surprisingly kind of hard to get around here
all small poultry is delicious tbh

This doesn't really work when Thanksgiving is a big family party where you have a bunch of people cooking stuff. It's not like i can really go "move aside grandma, i got the turkey this year"
