For soldier, I always used 2 rockets each time I jumped, it is very important to reload your clip to full in between each jump or else this rollout won't work well.
At the end of the soldier rollout, I don't have a full clip when jumping the opposite pack, you can easily reload to full by waiting a slight bit longer or taking off EQ earlier. And if the enemy demo goes pack, you'll have 3 rockets to deal with him.
