I feel its unfair not to mention Mike just for the fact that he's the most DM gifted player in the world. His aim is unreal, even if he didn't play his best in the finals.
As for other classes.
Clockwork and Kiler on scouts, clock really stepped it up in the finals and Kiler for his 1st season with Epsilon did incredibly well, and proved his worth at lan.
Seagull on roamer, so many clutch plays and airshots I even lost count, tek also played out of his mind but the finals were really disappointing tbh, just felt like he was running in with no objective at all and getting killed.
Yuki on pocket no doubt, that last snakewater game was probably one of the best individual performances I have ever seen in tf2, he was literally hitting airshot after airshot in consecutive plays as well as using ubers really well, I think he had like 15 airshots by the end of it. Lansky also played really well and consistent, but his style was never flashy like Yuki.
Termo and War on demo, both played really well and had their clutch moments and crazy shots, was not expecting termo to perform like that.
Shade on medic, I think there were so many throws in this aspect, like knoxxx and harbleu (except for that play against iM) choking in crucial moments, never expected it, especially from knoxxx, Shade was probably the medic with the least mistakes in the later stages of the tournament and that probably gave them the victory.
As for offclassers, sheep on sniper no doubt, tek also landed some crazy shots but I think he abused the class, Epsilon would have benefited more from having him on soldier most of the time.
And clockwork/b4nny offclassing on last defenses, god dammit, epsilon failed like 15 last pushes against their sniper/engie/heavy/pyro or whatever combo
