So I will try to explain it as best as I can.
Random times turning my day, behind my computer. My microphone.. OUT OF THE BLUE, starts playing what my mic catches and it gives the mic audio through my headphones.
I have no idea why it does that, or how... nor have I ever heard about this kind of a problem.
It has been happening like for the past week maybe less.

Are you hearing your mic's audio + whatever else there might be, or just what your mic transmits?

Could be crossfeed (interference) between your mic and headphone cables.

Yeah, that's my guess, next time it happens open up the properties for your mic and check that you don't have the "Listen to this device" box checked.
