precision is when the rocket hits the same spot every time under the same circumstances which makes both launchers 100% precise.

It takes less time to perform a rocket jump on the right side with the stock RL because you don't have to turn your view as far to the side as you do with the original. However it takes more time to perform a jump on the left side.
I find I can be slightly more mobile (assuming I use mostly RH rocket jumps) with the stock RL than with the original. Can be useful for jumping around everywhere with gunboats.

There's a setting which swaps viewmodels to the left, surprisingly it also switches where rockets/pipes/etc come from, cl_flipviewmodels 1/0.

You can do use either hand, like being able to rocket jump both left and right.
Playing with the stock is like playing with a right handed mouse.
It's hard to flick left when jumping but you can still do it.
Overall, it's really preference.

There's a few spam angles that are only possible with the original. I used this one everytime my medic was climbing spire on badlands:

I also think it's better for the current map pool's corners. Lots of people think it just equalizes out since you're better at some corners and worse at others, but it really doesn't. Some corners matter a lot more, like peeking top when defending badlands last. It's way easier to peek that with the original than the normal RL. I actually went through most maps and figured I should swap to left-handed models, but decided against it since I valued the spam angles + easier pogo routes with the original.

the right/left sided projectile source is used for every projectile based weapon in the game(crossbow, needles, pipes, stickies, flares, etc.) so a lot of people argue that the stock is better to play with for consistency's sake

Yeah I know about the viewmodel switch, but it just feels so weird seeing the stock RL on the left. I can't play like that. I tried the stock with the model on the left with viewmodels off, and it seemed ok, but then the original came out. Ill never go back to the stock.
