How can you not say Pro Skater 2, that shit had the best soundtrack of almost any game ever, and was also one of the best games ever.
Heart of Darkness is also an amazing game, not played it for far too long. The original Rayman too along with driver and the ps1 version of final doom are all really good games.
THUG came out around the time I had just started playing video games, with it being my first Tony Hawk game I just couldn't go back to the older ones and still have fun, so I never really touched anything pre-THUG.

Driver was my favourite with tekken. I also bought Driver: San Fransisco for PC which I can really recommend if you also loved Driver on the PS1. One of the best physics / game mechanics I ever played in a racing game. Also my dad was crazy about jumping the bridges @ driver and then glitching into buildings when the cops would come

Spyro and Crash Team Racing are like my top two games for PS1. Spiderman was also a classic.
For PS2 I'd definitely recommend the original Kingdom Hearts, it's my favorite game. I also played Marvel v Capcom 2 and NBA Street as a kid. Those were pretty sweet.
Edit: I can't believe I forgot about Need for Speed. That game was the shit.

if you still own a ps2 copy of marvel vs capcom 2, that's pretty rare
The Megaman and Megaman X series are pretty good plays. Megaman Legends is also worth a play, but i know nothing about the second one.
