Not to be pedantic, but 3:10 to Yuma is not underrated at all. It got great ratings, what it didn't do though was perform in boxoffices, it didn't even make it's budget back.
Anyways as for good movies that have come out recently,
Swiss Army Man is very good, and probably one of the most orginal films you'll see in a while.
Midnight Special is a great Indie sci fi film.
The Lobster is super arty, but if you can deal with a bit of arthouse, it's a great watch, also extremly orginal.
The End Of The Tour is a very interesting look at David Foster Wallace. Don't have to know anything about him really to enjoy it. I haven't read any of his books but it's still one of my favorite movies of the past few years.

Second that, Snowpiercer is great. It's actually a Korean production which is cool, because Korean cinema doesn't make it to the US very often.

Now You See Me 2 if you go for entertainment factor rather than plotlines. The critics didn't love it but it's my favorite movie ive seen in a long time.

Actually just watched that for the first time last night and it really did the balance of seriousness and actually humorous humor very well, would definitely recommend. Also according to Film Theory (which may not be entirely accurate i guess) everything that happens in the movie would be scientifically possible.

Y'all need some Kurosawa and Tarkovskij in your lives. Start with Seven Samurai and Stalker and work your way towards Ran & The Sacrifice. I've mostly been slogging through old black and white noir-flicks lately though and both The Third Man & On the Waterfront has been great.
Most recently I've been watching I, Claudius with my brother and while it's TV most of the episode feel like smaller movies so imma throw it in here anyways. Brian Blessed as Augustus and Siân Phillips as Livia are both amazing.
