Is it possible to get your current weapon to display in your HUD when you don't have viewmodels on? Like the setting in TF2 Classic.

cl_hud_playerclass_use_playermodel 1 is probably the closest thing that I can think of that will help with this
it won't be exactly like the screenshots that you had posted but it will display a 3d image of your current character in a certain place on your HUD, depending on what HUD you're using

with custom VTF crosshairs you could make something like this https://www.youtube.com/watch?v=otGfeCiU_mU
it's not that hard to make VTF crosshairs once you get the hang of it but will require some messing around to get started

You can do it with VTF images, however it will replace your crosshair, but you can just use a hud crosshair instead.
or you can have a crosshair and the image as the vtf
the main limitation is how some weapons share a file file so there is some overlap, for example with original and stock
