What kind of leap would AMD be? You can't even tell the difference. Unless you need TSX but Intel hasn't got that to work yet and I doubt you're running databases on your PC.
2. I'm not saying the 6700K isn't the best option for performance right now but I expect massive buyers remorse.
It's not future proofing when better options are available for the same price 2 months later.
I mean your options are:
Overclocking your 2500K higher - 0$
2700K - 150$
6700K + mobo + RAM - >500$,
7700K + mobo + RAM - same price as 6700K
Single threaded the performance gain would be:
2500K OC - 20%
2700K - same as 2500K
6700K - 10-15% over 2500K/2700K
7700K - 10% over 6700K
Multithreaded:
2500K OC - 20%
2700K - 30% over 2500K
6700K - 20-30% over 2700K
7700K - 10% over 6700K
There's also Zen but single threaded performance and price aren't completely clear yet.
6/8C will definitely be far better multithreaded, but at best it should compete with Broadwell-E single threaded, not Skylake or Kaby Lake (still as good as a properly overclocked 2500K).
3. You can't fit more than 2 GPUs on a µATX mobo but since you can't do that with LGA1151 anyway there really is no downside. Cooler height limitations depend on the case as always.

do you think ill find some super good deals on black friday/ cyber monday or the stuff im looking for is generally not really put on sale?
im not really short on cash so saving like $10 here or there on mail in rebate doesnt sound appealing to me, and id probably use newegg/ amazon for most/ all the parts

Average OC is 4.5GHz. The 7700K is supposed to come with a turbo of 4.5GHz.

And the year after that there'll be Coffee Lake with 6 cores.
Micro ATX are cheaper and micro ATX cases are cheaper as well. There's just no downside.

Stream on a second monitor should actually be getting decoded by the GPU, not the CPU. Current GPU?
What's the 2500K running at? I still have to check which games would even benefit from Hyperthreading. The problem is that 6700K benefits more from it so those nice +50% you get in Cinebench on stock clocks won't really happen. 10-15% is more like it (+20% IPC but lower clocks).
now that you mention it, i believe im running my monitor that i put streams on on the integrated gpu (my 980ti doesnt have a second hdmi slot) but i dont see how that would affect my game if the 980ti is the one the game is using, but it does, a lot
the 2500k is at 4ghz, that's what id run the i7 at as well probably, or 4.2

What about PSU and case? Any reason you don't want to keep them?
Also for games you're really not seeing much of an improvement. With the average overclock on Sandy Bridge being higher you could even get 90-95% of the multithreaded performance with an i7-2700K. So if you see people selling their old 2600/2700Ks (3770K too if you're into delidding) because of Cyber Monday that could get you almost the same performance for a fraction of the price. That's what I'd get if it was just about upgrading.

one of the PCs has a new psu, the second one's is really old, i dont remember what kind, it's not in front of me right now. i could probably get away with not changing it out but wanted to have one you recommend in case i need to.
i realize for games the i7 doesnt do much, that's moreso for the work side of things, id like to 'future proof' for like 2-4 years that's why i was thinking of getting a newer cpu. i like to keep things open that im working on, and sometime ill play a few games of rocket league or h1 during the day, with the 2500k cpu usage is pretty much maxed at 100% and sometimes it's pretty stuttery so im hoping a newer i7 would help that as well. also watching a stream on a second monitor and trying to play a game drastically affects my fps
both cases i have are super old, like 5+ years, theyre super heavy and clunky, i think id just like a more streamlined and hopefully better airflow option
