Shadow play, OBS, Windows Game Recorder (Yes, it's actually pretty decent), Radeon has their own form of recording though I am unfamiliar with it. These are all good choices though OBS gives you the most amount of control when it comes to settings.
If you want the absolute best quality you can render game footage (instead of the final screen output) by using Lawena or Source Film Maker. The downside is that these two options take the longest respectively.
I also want to mention that upscaling your 1080p video to 1440p in your editing software will take longer but trick youtube into thinking you have a 4k video and utilize a much better bit rate. If you've ever wondered why the quality dip in your frag movie is so high from others, this is probably the reason.

SDR is the best by far. It lacks audio so if that's a deal breaker then don't use it but it has the best quality and it records very quickly
