So I've been playing tf2 for quite a while now but i always keep swinging around on what my favorite class is. Lately I've been loving playing scout, solly and demo. I feel that I'm pretty much at the same skill level with all of them and i enjoy them all equally as much. However i want to improve and i don't feel like playing 3 classes at once will make me any better. I want to get into 6v6 but i don't feel like I'm good at any of the classes to actually play 6s yet. So what it basically boils down too; What class should I main?
I have this same problem, and I choose which one I dont get frustrated at. (It works only on a weekly basis though)
It's really what you think you have the most potential at. Nobody can tell you what to main.
It's not a problem, just play them all.
Playing mixes is even easier that way, so why not?

Just keep playing all of them. After a while you'll notice that there's some classes that you're better than at than others, and at the same time there's some classes you prefer playing more than others.
At this point you just play whatever the fuck you want.

do you enjoy spending hours a day in DM servers? play scout
do you have bad aim but still want to kill things? play soldier
does your mouse 2 work? play demo
are you irreparably bad at this video game? play medic

For the beginning scout is the best IMO. If you get good at scout you can get a lot of gamesense, but if you really want to be "important" for your team play demo. You can e.g. control the whole game as demoman. If you want to be aggressive play roamer if you want to stay passive go pocket. Its up to you :D
anjirocoolplay demo, because nobody plays demo
Play whatever you enjoy the most, not because of this. You'll be more willing to actually play the game and grind it out in dm if you enjoy playing. I had to swap to demo for 3 seasons because there were no demos to pickup and it was the worst (fuck you rando)

Just play whatever you like the most. you don't even really need to have a main. Being good at every class is ideal anyway, but if you really think you need one class to focus on just think about what your strengths are.
Good leader + Good DM = Pocket
good gamesense + movement + comms = medic
Good DM + offclassing = Scout
good at being a fucking %^$###@$*%#$% ^#@$(@#$ + offclassing + rocket jumping = roamer
good prediction + positioning + comms = demo.
Before anybody says "oh but capnfapn good positioning is important as every class! UR BAD", I'm just saying that different skills are more important for certain classes than others.

do you like playing like a giant shitter and do you enjoy playing sniper/spy/engineer during inappropriate times
then roamer is the class for you
then roamer is the class for you
Play whichever one you enjoy the most. Don't worry so much about being good when you're first starting out.
I was atrocious at scout (particularly aiming) when I first started. I mged the medic on my first ugc team (who has like 20 hours on scout even now) and got crushed by him. I didn't care that I was really bad at scout, I enjoyed it and wanted to get better at it so I looked for teams looking for a scout. Now I'm only sort of bad.

I recommend you play pocket soldier because pockets get the most tf2 girls
I had the same problem, i still to some degree want to keep changing classes. How i have supplemented this is playing something that can offclass like roamer. The thing that helped me decide is i LOVE rocket jumping so i chose soldier. Maybe you like a mechanic about a class or the role that it plays. For me roamer was my option, i was the throw away class, which i like. You rocket jump a lot as roamer, which i also like. You also get the chance to offclass.

Try playing some lobbies/pugs as each class so you get a good idea of your role as each of them. In pubs, each class doesn't really have a role as much, so a somewhat competitive format could help you solidify on which class you like the role of if you don't know which you prefer the mechanics of.
Or, you could just try playing pocket. You have 300 hp, 4 rockets, and 6 shotguns. The projectiles will help somewhat with demo and the hitscan with scout, so you could still be good at all 3. Conversely, you could play demo and scout, and soldier will keep up as your pipe and scattergun aim improves.
Finally, if you don't think you're good enough for ESEA, you could try playing UGC. It doesn't cost anything so you have nothing to lose.

Medic/Demo. giant pool of soldiers and scouts that dm/mge daily, not much room to express your style but with a lesser pool of known medics/demos it could be easier to fill the gap in teams.
From my experience Scout is the easiest class to play. He's a good class to play when you get into comp as they aren't as important as the Demo/Med/Pocket, so you don't have to worry if you get picked. Plus offclassing fun.
At the same time, playing Pocket is nice as you have plenty of heals and can make mistakes without it being a huge deal.
Demo is probably the hardest in my mind, but at the same time, there aren't many Demos out there. Teams don't have any problems finding Scouts or Soldiers because there's so many of them. Finding a Demo can sometimes be difficult for teams, so playing Demoman will get you onto a team easier.
