That's because people don't really like change, every time something new comes up most of the reactions are negative. Just by not looking "similar" to what they are used to people automatically deny even the possibility to try it and maybe get used to it.
Although I can't really say this is a specific TF2 community problem, it happens all over the world in pretty much every aspect. Also, I'm not including everyone! I do know of a lot of guys and gals who don't mind change and are actually eager to try new stuff and see what they feel about it in an unbiased way. Those were the kind of people who helped me and Sir Villeta developing HUDAS :)
Anyways, to stay on topic, what I really enjoy on a HUD is how well everything fits together. How a design choice is implemented in every single element. Not just a puzzle made of pieces from different puzzles and stitched together with glue. That's why I actually enjoy default HUD a lot. Everything was designed to fit the style they had in mind. Although it wasn't really made with competitive in mind, with a few adds (like numbers on targetID's HP and a redesign of spectatorGUI) it really is a fine piece of hud :P

Simple is always nice, but an option to have the map timer somewhere nice and big now that it's a HUD element since a recent patch. Tabbing to time ubers is kind of annoying.

Whoever needs lime green ammo and hot pink reserve ammo has bigger issues than their HUD.
The font is white, the shadowing is black. Valve didn't neglect the HUD of a polished game. They even have different sizes for ammo in clip and reserve.

That's what I really like Rayshud. It comes with a program you can update stuff from with one click, and several options in the same program. Also, it basically comes with Rays, your personal and polite troubleshooter. <3

Visible but not overwhelming colours. Well positioned health/ammo to avoid tunnel vision but still catch numbers in peripheral vision. Clean, sleek fonts. And finally originality, there's far too many huds that are made from scratch with the final outcome looking almost identical to pvhud.
