What are your favourite vegetables and why? I'm not a picky botanist type so if something is botanically a fruit or whatever I don't care.
Personally I really love peppers. They taste great both raw and cooked and the different colours make adds to their loveliness. For cooked I honestly like green peppers the most.

BLoodSireOnions. Pair well with everything.
Don't even need it with anything else. Chop some up, cook it on a pan and then have it with some salt.

Edit: Corn is also really good and I like peppers as well. One time I made this nice relish made out of roasted peppers that were grilled, diced it and mixed it with some balsamic vinegar and cilantro. Tastes really well with some grilled sausages

I love roasting, if I can do something in the oven, I'll do it. and it's so simple, tasty and healthy. Honestly just lay down a layer of onion rings and peppers on the bottom, let some meat or chicken marinate with some seasonings and put it all in the oven for 1 or 2 hours (depending on the meat).
Onions are probably the cheapest thing u can buy in a grocery store aswell so they are the fuckin best.

tomatoes are only good when I can't taste the texture. Something about how they just explode with juice when you bite into them is incredibly off-putting to me. However they make excellent sauces, and can contribute well when in combination with other veg/meat.

Well, steamed broccoli makes for a very easy and healthy side which is enough for me to rank it pretty highly. Though I think I'd generally rank cauliflower above it.
Onions seems a bit too obvious, so I'd go with sweet potatoes or yams. Great by themselves, but can also makes a great additions to stir-fry, some types of curry, and really round-out dishes like this(very easy recipe).
