For me the ability to put rollers precisely in a chokepoint from miles away to deny a push is valuable, because i can either hit the direct, or be sure the roller's gonna hit, which is not (always) the case with GL.

It's definitely a little bit of everything, but I have a feeling you're missunderstanding sigsegv. The Iron Bomber and Grenade Launcher on average go the same distance before exploding (assuming they never touch the ground) and go the same speed, BUT Iron Bomber variates a LOT less and you can see it in that video. The maximum distance the ironbomber goes is less the minimum distance is higher, the amount the ironbomber deviates from center either left or right is also lower now it's not by a whole lot but it still matters.
Combine the lower variation in the iron bomber with less roll giving demomen better ability to deny a specific area that isn't directly next to a wall and have a shorter fuse making timing WAY easier and it becomes a distinctly better choice. It's just icing on the cake that the iron bomber projectile overall is just way darker than the stock projectile so it's harder to see if you're looking directly at a demo or dark back grounds. I'm also pretty sure that the Iron Bomber fire animation is way less noticeable than the stock grenade launcher.
the range of the two weapons isn't the same due to the shorter fuse of the IB, but theres not a lot of spam angles that make use of this advantage the GL has IMO.

little to no difference, plus being able to bank rollers off walls into chokes is cool too ie. holding process 2nd and hitting the wall of choke or shooting over the wall

process rollout to choke is pretty nice with stock, same with some other weird angles, however the far increased likelihood that missed rollers hit with iron bomber in normal fights as well as the slightly (potentially slightly placebo induced) increased direct likelihood with IB make it more desirable normally and also most of the time I just cba to switch because I forgot yaknow

I used iron bomber before the changes to it mostly because i prefered the sound and appearance + it was nice to experiment with different spam angles to maximize the chance of hitting with rollers if you couldn't hit them with the pipe itself.
That said, there are 2 main aspects nowadays for me to not go back to stock and those are min viewmodels (stock just looks kinda weird, but iron bomber is a bit more reasonable) and because it "feels" more consistent, i don't know if that last statement is true at all, but the tumble with stock pipes made me a bit psyched at times when i missed close shots or my spam pipes hit walls if it was really my fault or not, and with iron bomber i can be almost certain that when i miss a shot, other bullshit aside, it's most probably my own fault.
The shorter fuse really does not matter all that much and is truly a sidegrade kind of stat, since losing long range spam angles vs 1 every 2 fights dealing 30 extra damage is actually rather close. i like the iron bomber cuz if u spam a choke with it ppl have to wait for explode and cant just let it roll past them which can really mess up ubers with multiple ppl if they arent brave enough to W hard af. The bonus spam angles the stock lets you do are nifty but they really dont do much besides help you pad your stats during stalemates. Even then id rather run iron bomber because its much easier to ~zone~ out ppl who are peaking too hard by placing pipes between them and their team because that will actually get ur team kills and not trash damage.

That being said it seems like the iron bomber and stock projectiles collide differently since iron bomber blows up when any part of the projectile collides with projectile hitbox but sometimes parts of stock projectiles can enter the hitbox but wont register as a hit
