good thread, check out chinese cooking demystified if you like chinese cuisine it's very interesting, bong eats has a lot of indian recipes and i also like bruno albouze's channel though he seems pretty weird.
mapo tofu is a hit to cook at home, easy and tasty although you need sichuan pepper which might be difficult to find.
chickpeas in coconut milk with some thai curry is also great and very easy.
can't say i cook a lot of interesting stuff though since i need to make lunchboxes of almost everything i cook so it's usually stews/soup with rice. however i did make hummus and pita bread the other day which turned out great.
edit: kung pao chicken is also very good but there is peanuts in it so maybe not take it to work.
edit again: i think that having a cookbook is underrated, i pull most of my recipes from the web but if i'm looking for something to cook it's hard to beat a cookbook imo. i got my great grandmother's cookbook some years after she passed away and it's quite nice to have, pretty old and has a lot of interesting "traditional" (more like old nowadays) recipes. also making bread/pastries is fun if you want to do something other than dinner. check some recipes where you rise the dough overnight and bake it out in the morning, it's great.
