Ive seen setups with earbuds in for audio and a headset around the neck for the mic.
Other setups were like wearing noise cancelling headphones to eliminate outside noise to make it easier to hear in-game. Due to on stage half the time not having booths of sort.

Yea. Just set your audio device in what over VOIP you're using to the other headset.
Voice activation but I run a noise gate on my microphone to not transmit anything under a certain db level so my keyboard and fans and shit don't pick up.
Mumble has it too but I have it setup for OBS (which might have it too), makes it easy to switch between Discord, Mumble and stuff without having to change anything.
Use a Push-to-Mute for when I want to talk to just the stream and not bother others in Discord or Mumble.
