Well this is gonna go downhill quickly...
The easiest way for Minecraft would be to use Hamachi and login to your friend's world when they're sharing it via LAN. How well it would work dialing into the Hawaii system with 800 ping may be questionable though.

I can play regular minecraft servers fine. No delay at all. But thanks for telling me about hamachi
Download the server software from their site, forward port 25565 or, if you prefer using another, forward that and specify that in Server.properties, and have them connect to your_ip:port.
