onions were mentioned first post, and i probably agree because i think use them in 99%+ of (diner) recipes i cook.
but there are a ton of vegetables i really really love. i probably cook like 6 out of 7 days, and will use vegetables 100% of the times i cook. i honestly think i don't know a single recipe that does not include vegetables.
i wanted to make a list of fave vegetables and fruits i use but the list would be too long.
spices are so cool as well, though! i have many dozens in my cupboard and i can't live without'em, just like mah vegetables.
i'm a big fan of spanish and italian kitchen. never have been a fan of asian kitchen, unfortunately :(

Roasted brussel sprouts and asparagus are amazing. Snow pea leaves, artichoke, daikon, arugula, beets, spinach, romaine hearts, onions, cauliflower, broccoli, and zucchini are also great. I love veggies.

Cooked: sweet potato, broccoli, green pepper, potato
Store bought vegetables are usually shit. We grow a lot of our own vegetables and they taste so much better (esp. potatoes, which are shit-tier from supermarkets but god-tier from the garden)

Cooked carrots are great, if you slice them thin and stirfry so they're still a little crunchy or stew them so they're nice and soft
