Maybe not the best song examples, but School of Seven Bells is pretty awesome. Not entirely up-to-date with the "group" which basically is one person at this point though (her sister left and the guy that was with them passed away from some sort of cancer).

Im sure you know the "holy trinity" already which is My Bloody Valentine, Ride and Slowdive
I also enjoyed the Cocteau Twins, Kitchens of Distinction and Galaxie 500 a lot

Galaxie 500 is a lot less shoegaze and a lot more dream pop, but good if you are trying to figure out the roots of shoegaze as a genre. Also look at Jesus and the Mary Chain and Mazzy Star. Jesus and the Mary Chain's album Psychocandy inspired almost every shoegaze band in the 80's and 90's.

of the non-classic era recs I can co-sign alcest, souvenirs d'un autre monde is prolly a top 10-15 all time album for me

Alcest were already mentioned a few times, and if you want pretty much more of that Les Discrets are great too.
Mira is nice. Sailors With Wax Wings are more droney but they're nice too if that's your thing.

It's more of a post-punk/shoegaze/black metal mix. A lot of variation because of different band members' music influences.
The Angelic Process, a shoegaze+drone metal collab, classic in the genre:

Don't forget precursors, Cocteau Twins. They're early album which are more of shoegazy gothic rock are actually brilliant and less generic than their later, dream pop material. I still love it though.
