Cool video eXtine! Always enjoy seeing new cooking tricks from chefs like the tilted pan and starched water. Although the real restaurant cooking trick, as you showed, is add a ton of butter, salt, and oil.

He used chili flakes I think, not powder. They're not that hot usually, especially if you simmer them in a sauce for ages.

mmm just leave it out War. Chili flakes are generally not crazy spicy, but sometimes you uneXpectadly bite into a seed and can get outspiced even if there isn't much chili present. I'd suggest roasting the garlic on the side, then adding it to some cooked down diced onions. That way you'd get some more flavors in there. Still would be delicious with just the garlic and tomatoes though.

Well, a typical alfredo sauce would just be butter cream and Parmesan. Giadi Laurentiis puts a splash of lemon juice in her's which definitely is a nice touch.
Grana Padano is really similar to Parmesan but cheaper, a lot of restaurants use that instead of real Parmigiano Reggiano. Pecorino Romano and Ricotta Salata are both delicious as well, but maybe a little too salty to make a whole sauce with em.
With Cauliflower, cheddar cheese is pretty classic. Smoked gouda would also be awesome.
Cheese is delicious, whatever your favorite is would surely work well.
