Almost all home cooks just need 2 knives: a chef's knife and a serrated bread knife. All the extra little things sold in a giant butcher block are really unnecessary if you know how to properly use a gyuto. Here's my gyuto:

Too lazy to take my own picture, but mine looks exactly the same. Will last me for life unlike crappy western knives. Saving $$$ to splurge on a completely (unnecessarily) wicked-looking bread knife. That's all the knives I need.

Awesome! I live over near a Viking cooking school and headquarters and I always see some fancy knives they have for cooking and such in their shop but have never gotten into that type of thing yet.

I've seen them in a few places. I wouldn't want to be carrying them regularly just in case something goes down, but if you do get some to keep at home it's not a big deal.

I think the restriction is knives intended to be opened with one hand.

Knives are definitely a hobby I could get into once I get a real job because good knives cost a lot. I use to flip a bear & sons 114B almost every day and got cut up a lot after I took my training wheels off (painters tape). But with repeated use of the knife, handles would just literally break and this has happened two times so don't buy a cheap balisong knives because they'll break after 2-3 months. The good ones cost $200+ usually and that's a lot of money so I'm not going to buy a new one for now. I also really like switchblades and kris blades from a collection point of view, but again doing that costs money so it's something I'd only do once I start working a real job.

Unfortunately yeah a lot of it does cost a lot. The benchmade balisong collection is great and the 62T which is a dedicated trainer works quite well and is sub 200$.

I had one of those bear and son's knives and it broke 3x before I gave up getting them to fix it. I found a decent one on bladehq afterwords ( bradley kimura) and it's been great.

Bear and sons aren't the most reliable company that's for sure.

I wish you could still buy bradley kimura knives because I love their design and everyone says they're very, very reliable for the price they come in. Unfortunately looks like you can only buy them off of forums, and I don't want to buy a used balisong so I'll pass for now. Next balisong I buy will probably be a benchmade 62, 63, or 67 but that won't be for awhile.

I'm not interested in trainers, it's gotta be a real blade or nothing when it comes to balisongs for me. Thanks for the suggestion though.

Squid industries Co if you can get one when they drop every so often costs about 150$ and is one of the best trainers. Benchmade 62T (the ones with the red training blade) cost about 200$~ and flip pretty well granted it uses steel handles.

Do not buy any of the 10-15$ knockoffs on eBay. You rarely see quality balis on eBay.

You can definitely find say a benchmade 62 for about 200-250$. Depending on condition. I can hook you up if interested. It's a live blade.

Haha maybe I'll hit you up after I save up a bit more money. I know one things for certain and that's don't buy balisongs that cost less than $100 or a quality used one for atleast $70 when you already know the basics of knife flipping.

Like shdsteel said, never go ebay since you'll only be wasting your money. I would suggest the same bear and son knife I bought to learn how to flip (bear and son 114b), because honestly it's a good knife to start out with since it's heavy and the blade isn't too short, but if you flip that particular knife a lot it will not last long. Buying a quality trainer that costs in the hundreds if also a really good idea because most of them will never die on you, if any at all. You may just want to buy a $30-40 dollar knife and see how it goes. If you enjoy the balisong life then you can always get a quality one later like what I'm planning to do.

There basic Trainer is about 150$ and its WELL worth it. If you can get one ordered before they sell out within the hour it drops, you'll have yourself one amazing balisong.

Karambits actually come in several styles including fixed blades and folders to be more like a pocket knife! It's up to you on style. I also know there's a company that makes subpar "metal" knives to be just like csgo items but aren't good for anything else. Are you looking for an every day carry knife to cut stuff with, a self defense knife, or just for looks?

I'm more into axes because I find them more useful out in the woods on my private resort. I have a very large collection of Neemantools, Hoffman, Jesse Reed, and Tuatahi axes. Knives just don't appeal to me because they're much much slower at getting the work I'm doing done.

The advantage of serrations (if they are correctly machined) is they don't really go dull the tooth is what is doing the cutting. You can cut through much tougher material without needing to take your blade to a steel or a polishing strop afterwards. For example you can cut through cardboard all day long with a serrated knife with no noticeable effects on cutting performance, it won't slice but it doesn't matter it's the tooth that cuts. Where if you do that with a straight blade even a super high Rockwell Japanese steel like cermax 66 it will dull because of the clay based abrasive that is in in the cardboard.
