The Wrecking Crew is an insane documentary on the titular group of relatively unknown session musicians who more or less singlehandedly shaped the sound of 20th century music as we know it.

Stop Making Sense (Talking Heads) is the weirdest, most interesting and non sequitur concert movie you will ever see.

Less impacting but interesting nonetheless -- Stewart Copeland, the drummer for The Police (who, fun fact, also wrote and produced the original Spyro soundtrack) wrote and presented a cool documentary on the history of the drumset. it's on youtube somewhere.
