I have a place near Toronto that's fairly cheap for a premium sushi place ($60/person) and I try to go there once every three months. Sushi from an exceptional chef is probably the best cuisine experience I've ever had.
Bluefin tuna belly from the last time I was at Sushi Zen in Toronto:
