What viewmodels fov do you use?
Just play around and see what works for you.
Having said that I usually have primary weapons at 0, secondary at 100 and melee at 75.
Most people use anything between 80 and 110 as a universal viewmodel_fov (or have viewmodels completely off).
You should check out Broesel's crosshair switcher (which also lets you change viewmodel fov for each weapon) if you want different fovs for different weapons. http://etf2l.org/forum/customise/topic-11110/

0 on all weps except for melee(85) and needlegun(54 w/ no viewmodel).
I turn everything off (With r_drawviewmodel, not viewmodel_fov) except for melee viewmodels, which I have at 120.

Sure it is, although cranking it down to 0 on for instance the heavy and pyro primaries basically gives you an unfair advantage :p

viewmodel_fov 74 with r_drawviewmodel 100 with OpenPlugin.
Usually off but sometimes on at 84 fov for projectile weapons (rockets, piles, stickies, needles, crossbow, bison)

The actual view model is off, but having set to that will disable my own bullet trails and keep everyone elses.

except my fov with the medigun is 25, because it lets me see it in the corner so I don't accidentally run kritz, but it's still out of the way.
